Gingerbread Bar Cookie Recipe
This gingerbread bar cookie has fewer ingredients and is much easier to make than gingerbread men. No need to chill the dough, roll it out, cut it into shapes, and then ice and decorate it after it has baked. The recipe, adapted from English Food by Jane Grigson, makes gingerbread similar to the type popular in the English Lake District town of Grasmere.
